Recipe: The rainbow cake that will amaze your child

Here is the recipe discovered on Sam's blog @buttermilkbysam
That I slightly modified because some products are difficult to find in France:
260g plain flour
100g cake flour
230g of butter
68g coconut oil
450g of sugar
1 tsp of salt
3 tsp vanilla*
2 tsp baking powder
4 egg whites at room temperature
230g of buttermilk (buttermilk or buttermilk) which I replaced with 2 natural yogurts
Dyes: 3 primary colors that I mixed to make green and purple. In all there are 5 colors, in this order: Red, yellow, green, blue, purple
White chocolate ganache: 100g of white chocolate + 60g of thick cream
- Preheat the oven to 165°
- Soften the butter with a spatula
- Add the butter, coconut oil and sugar little by little, mix well, then add the salt, vanilla and yeast.
- With the mixer, add the egg whites, 1 by 1, slowly.
- Add half the flour and mix
- With the mixer, at slow speed, add the yogurts, then the rest of the flour. Mix.
- Reserve half of the dough and use the other half for the color: In 5 separate bowls, prepare the colored dough: red bowl: 5 tbsp of dough + red coloring; yellow bowl 4 tbsp of dough + col. YELLOW; 3CS blue bowl of dough + col.bleu; Green bowl 3 tbsp of dough + col.vert; 3CS blue bowl of dough + col.bleu; 2CS purple bowl of dough + col. purple.... This is the funniest part to do with the children!.................................. ....






- in the bottom of the mold, start by pouring a base of uncolored dough (be careful, you have to keep some for the end of the recipe)
- with a pocket or a small spoon, spread the red base on top but without going to the edges
- For each color, make a circle without completely covering the color below
- Finally, add a layer of uncolored dough to cover the entire cake.
- bake in the oven for 40 to 50 minutes
- Leave to cool for 15 minutes then cover with the white chocolate ganache or a glaze of your choice.



*I used vanilla powder, but 1 packet of vanilla sugar will do the trick.
* The mold I used is 24 cm, ideally it would be 22 cm.
